Christmas Cake Pops

Hello and happy Monday!  I hope everyone had a great, long Thanksgiving weekend.  Christmas season is definitely in full swing and I’m loving all the decorations and DIY projects on the web.  One thing I need to try out is my cake pop maker that is sitting in my cupboard unopened!  I came across some really cute Christmas cake pops that I’m dying to make.  Hopefully this weekend I can put the maker to good use!

Cupcake Topping Bar

Yep, you read that right … a cupcake topping bar!!! When I found this post on Green Wedding Shoes I couldn’t believe my eyes and had to share this one on the blog!  The idea came from Enjoy Cupcakes, a darling cupcake shop that is also portable making it’s way to weddings and parties in a restored vintage trailer!  You can see a picture of it on their website, too cute!

The shoot had a fall, rustic theme to it, perfect for the fall season that is quickly approaching!  This idea is fabulous for weddings but can also be used at any party or special occasion.

Cupcakes were frosted with just a ring of frosting in order to leave room for the toppings to be placed in the middle.

Vintage syrup dispensers were filled with home-made sauces and syrups!

They used hallowed out mini pumpkins and filled them with various cupcake toppings (what a smart idea!).

How good do these look?

I’m completely in love with this idea – make your own personalized cupcake!  It’s so easy and fun!  Maybe not for my wedding in particular but for parties!  I’m so glad I came across this one, thanks Green Wedding Shoes!

Cake Anyone?

Ok, I LOVE this!  But then again, when do I put something on my little blog that I don’t love?!  This is such a fun, fun, fun idea and you could do it for any type of celebration. Found on Strawberry Chic blog, this little party was dubbed “Let Them Eat Cake” – an all girl cake decorating party which included snacks, darling decor, and a cute little cake stand for the girls to take home!  I want to have a party like this of my own!

Too cute huh?  The little cakes were already pre-frosted with buttercream frosting, so the girls just had to concentrate on their cake decorating skills 🙂

Rice Krispies Treats + Dipping Bar = Awesomeness!

Can you guess what I’ll be doing this weekend?  Rice krispies treats have got to be on my top 5 list of favorite sweets and this is definitely a rice krispies treat upgrade – I love it!  Great idea for parties (especially with the kiddies), bridal showers, or just to satisfy that rice krispies treat craving!

Rice Krispies Treat Recipe

Ingredients
3 Tablespoons Butter
1 package (10oz or 40) regular marshmallows or 4 cups of miniature
marshmallows
6 cups Rice Krispies cereal
lollipop sticks ‐ optional

Directions:
In a large saucepan, on low heat, melt butter. Add marshmallows and stir untilcompletely melted. Remove from heat.  Mix in Rice Krispies cereal and stir until well coated.  Once it’s cool enough to touch (5 minutes), use your {clean} hands, roll a small ball of the rice krispies mixture and set on a sheet of parchment paper. Continue until all the mixture is all gone.  For Rice Krispies on a stick, insert stick into the center and set aside for at least 30 minutes to finish cooling.

Decorating:
2 cups chocolate chips
Assortment of sprinkles & toppings
Foam block
Place toppings in individual bowls. Set out for dipping.  Using a double broiler (or microwave), melt chocolate chips. Remove the chocolate from the stove. Dip the tops of your rice krispies treats into the chocolate, hover over the bowl until its no longer dripping. Either dip or sprinkle topping(s) of choice.

Birthday Pancakes

I’m going to let you all in on a little secret.  I love pancakes!  I never seem to wake up early enough for breakfast on my days off, but when I do, all I can think about are pancakes.  How cute are these cake batter pancakes with sprinkles?  Yum, yum, yum!  Thanks to How Sweet It Is for this tasty recipe.  Who wants some pancakes?

Cake Batter Pancakes

makes about 12 pancakes

1 1/2 cups all purpose flour

2/3 cup yellow cake mix

1 tablespoon sugar

3/4 teaspoon baking powder

pinch of salt

2 eggs

1 teaspoon vanilla extract

1-2 cups milk (I used vanilla almond milk)

assorted sprinkles

Combine flour, cake mix, baking powder, sugar and salt in a bowl and mix. Add 1 cup of milk, egg and vanilla extract and stir until smooth. You want the batter to look like regular pancake batter; not too thin, not too thick. This will vary greatly on the brand of cake mix you use. Start with 1 cup of milk and add more if needed. I suggest a small taste test as well to see if the pancakes are flavored enough.

Preheat a skillet on medium heat (I use an electric grilled and turn it to 250 degrees). Fold desired amount of sprinkles into batter. Pour batter in 1/4 cup measurements onto skillet and let cook until bubbles form on top, about 2-3 minutes. Flip and cook for 1 minute more. Serve with vanilla glaze.

Glaze

1 cup powdered sugar

1/2 tablespoon milk

1/2 teaspoon vanilla extract

assorted sprinkles

Mix milk, extract and powdered sugar until glaze forms. You may need to add a little more sugar or water/milk to reach desired consistency. Mix into glaze and drizzle on pancakes.

I know what you’re thinking … whoa that’s a lot of sugar.  True – but hey … you only live once 😉
